The other night I was struggling with what to make for dinner. The only thing that sounded easy enough and yummy enough was breakfast for dinner. Everyone likes that, and it could be ready fairly quickly. I didn't quite have all the ingredients for what I really wanted to make. But then Eric came to the rescue: he was on his way home from Marion and there just happened to be a Meijer across the street from the OSU offices he was at. Did I need him to pick anything up? Why, yes! I had him get some peppers and Cool Whip, and whatever else he wanted to grab.
When he got home, I had the whole wheat waffle batter almost ready, the strawberries washed and hulled, and the potatoes chopped. I blended the strawberries with the Cool Whip, chopped up some peppers to add to the potatoes in a hot frying pan, and put the waffles on the iron. In a few minutes we all sat down together and I heard the best sounds a mom can hear, "Mom, this dinner is delicious!" and "Waffles?! Mom, you're the best!" And I got a taste of my childhood: biting into my waffle topped with strawberry whipped cream took me right back to my grandma's kitchen after waking up at a sleepover. It was a very delicious night.
