One of the things I love most about Eric is that he always tries to make birthdays, anniversaries and holidays special for me. He always makes me a card with a sweet hand-written note inside, or plans weeks in advance of what he wants to get me or make for me. He is always so excited about what he does too, so it makes it even more special when I see how much he enjoys making me happy. I wish I could be the same for him, but it seems like I always finish things up last minute or don't do anything at all, and I always feel really bad. Well, at least Eric and I were able to plan an evening out for his birthday this year. We do our baby-sitting swap with Ryan and Kim Roberts, and we planned ahead of time to go out on Eric's actual birthday. Thanks to my mom, we had a gift card to Red Lobster, and since Eric had just been in Maine and had lobster there, we decided to go get some for me to try too. Here we are waiting to be seated at the restaurant.

We really enjoyed our meal there, just taking our time and getting a chance to relax. (Eric was a little disappointed that I got a steak, but I DID get it with lobster and shrimp on the top! I really do like seafood, I just like steak more!) :) After dinner we stopped at Culver's Frozen Custard to get some sundaes. Eric loves frozen custard, and his favorite place, Ritters, closed a while ago, so Culver's is the next best. Since we had ice cream that night, we decided not to have cake with the girls the same night, but to extend the festivities to the next day and have some then. Eric decided he just wanted brownies and ice cream, so here's what I came up with to make it a little more creative (the bottom layer is a Klondike bar).


I wonder what he wished for....

MMM...I love Red Lobster. We use our credit card reward points to get gift cards there, but it's time to go back.
